More taste than haste
Kurt Rottensteiner is convinced that Pinot Noir grapes thrive on the loamy soil in Mazzon, where the afternoon sun warms up the slopes and which has the Ora wind from Lake Garda blowing across it. As white wine, he and his wife, Johanna have chosen the Manzoni Bianco grape, which maintains its freshness and minerality in warmer years, too. The cellar only contains grapes grown on the 5 hectares of land at Brunnenhof, where non-barrique dry white wines and red wines are cultivated in a traditional manner. The grapes only reach the casks when they are ripe, where fermentation takes place spontaneously; only when the wine is mature is it bottled. And only when people can enjoy some peace and quiet should they drink the wine.
